This only uses the white part of the pomelo skins. Boil for 5 mins to remove bitter taste then rinse while squeezing the liquid out. Make a simple syrup 1.5 cup of water 1 cup of sugar ½ juice of an orange or 1 lemon Pour the skins with the syrup, stirring at a medium heat until all the liquid is absorbed into the skins.
